Looking for info on giant sculpture

I live in a small village in rural Newfoundland that is slowly dying because there is little fishing left. The community rebuilt a beautiful, 100 year old stone lighthouse which has attracted some tourism. We are interested in building a giant cod fish sculpture-sort of roadside kitsch- to attract more people to our village. Any info on people who have done this, processes, materials etc. would be greatly appreciated.
