I have had a practical interest in this matter for many years. Any good (thorough) book on Michelangelo will discuss some of his working techniques. Benvenuto Cellini's Autobiography also discusses working methods, though is verbose. I'm sure there are many others. I have read somewhere that painters used small plaster casts of whole or partial bodies in various poses, reputedly by Michelangelo, as composition aids. Please report your findings for others, if you will.
